Each Shun Premier blade is crafted of 68 micro-thin layers of Damascus steel that have been hand-hammered using a Japanese process called tsuchime, which gives Shun’s knife blades their beautiful ripple-effect finish while creating an incredibly smooth surface that helps release food seamlessly. Shun Premier knives are built with a proprietary VG-MAX cutting core that is extremely hard, providing intense durability and a fine sharp edge for precision cutting. Lightweight and ultra-sharp, each knife is balanced with a contoured moisture-resistant Pakkawood handle with a stainless steel end cap for perfect balance and a luxuriously rustic look.
