The blades are composed of Shun’s proprietary VG-MAX super steel core, which is outstanding at taking and holding a precision edge. The stain-resistant, layered Damascus cladding supports the core, and where the steels meet a unique undulating line is formed for the distinctive, attractive design. Finally, each knife is given a hammered Tsuchime finish, which acts like hollow-ground cavities to reduce drag. All combined, these properties create a harder, sharper, lighter blade. • 8” Chef’s Knife – Your all-around kitchen multitasker, this knife is perfect for nearly all slicing, dicing, and chopping tasks. Use it for prepping fruits and vegetables, slicing large produce, or carving a roast. The blade is 8” x 1.8” and it will fit in one of the bottom slots on the block
• 6.5” Utility – Sized between a chef’s knife and a paring knife, it’s perfect for in between tasks like trimming beans or broccoli, slicing a sandwich, or slicing a tomato. With a 6.5” x 1.5” blade, it fits nicely in one of the lower slots of the knife block
